Although many like green eggs and ham, I'm not a ham person outside of the holidays.
1 tsp olive oil
1 shallot, finely diced
1 tsp chopped garlic
1 small bunch of spinach leaves
1/2 lb shrimp, slice large shrimp in half
3-6 eggs
salt and pepper
Heat oil, add shallots and garlic, season with salt and saute till softened. Add shrimp, you can used fully cooked shrimp or fresh, until heated or cooked through, season with salt and pepper. Add spinach leaves and wilt, don't over cook or they'll lose their color, these eggs are supposed to be green! Crack eggs, I cracked mine straight into the pan and stirred everything together but if you don't feel confident in your egg cracking ability, crack them into a separate bowl. Stir continuously until eggs are cooked through. This is not an omelet, this is more of scrambled eggs.
